This Dutch-processed dark unsweetened cocoa powder is in a class unto itself. We have removed less fat from our cocoa (22-24% fat content), which results in a more intense and immediate chocolate flavor. This wonderful Dutch cocoa powder has a touch of ground vanilla bean. Our regulars know what a great cocoa this is!

This "service pack" of ChefShop cocoa powder, essentially a thick zip-lock type bag, is meant for commercial users like baristas and gelato makers, which is why the packaging is Plain Jane with a label. Like much of the foods and ingredients that go to the back of the house, the contents are more important than being pretty. 

And price relative to quantity is also a crucial part of the commercial kitchen. So that is why we adopted this bag of cocoa, for quality of product and for value. 

And that's what we have here in this bag of gourmet cocoa powder. The resealable bag keeps the cocoa powder fresh and it can last a good long time. Now I am not proud of this, but I have found bags of this cocoa powder hidden away in the cupboard, years later, (I can tell by the label) and though nowhere near as good as fresh, it still works and does its job. Store in a dark cool place (just remember it is there) and you are all set.


Preparation and General Uses of Cocoa Powder

Cocoa Powder Hot Chocolate Recipe

This is a classic hot cocoa recipe - perfect if made with a rich, high-fat, unsweetened cocoa powder like ChefShop Cocoa Powder, and whole milk or half-and-half from your local dairy.


ingredients:
1/2 cup India Tree Super Fine Caster Sugar
3/4 cup ChefShop Cocoa Powder
2 1/2 cups whole milk OR 2 cups whole milk and 1/2 cup whole cream 
1/4 teaspoons fine Trapani Sea Salt
1/2 teaspoon 2x Vanilla Extract

directions:

1. Mix sugar, 1/2 & 1/2, cocoa powder and salt together in a saucepan. Stir over medium heat until mixture gets to just below boiling and the sugar has dissolved. Cook, stirring constantly, for 1 minute. Remove from heat and add vanilla. Blend and serve immediately.

Yield: 4 servings

Make something good for yourself! Try mixing condensed milk, cocoa powder and melted butter together, then add crushed up Effie's biscuits. Scoop spoonfuls and roll into balls. Cover with crushed nuts; chill and then eat.


Ordering Information
Please note that the cocoa comes in a "service pack." It is sealed in a thick plastic bag for production baking, and the bag attracts cocoa powder to the exterior during packaging. This is quite normal and will not affect the product.

WOW!
I just received my first order of Pernigotti Cocoa. I have been a fan of Valharona Cocoa for years, but this may have replaced it as my Favorite! It has an incredible taste, I could smell it thru the double bagging. It is just GREAT! I would highly recommend it and for 2.2 lbs it really is quite a bargain!

The Top Cocoa Ever
first discovered this cocoa at Williams-Sonoma 20 years ago.....and have been using it ever since. Of course, now I buy it in large quantities! It makes a decadent hot chocolate, and I use it in brownies and Martha Stewart's one-bowl chocolate cake recipe. Really wonderful.....

Best Cocoa on the Planet
I have been using this exclusively for years now. I have a 'secret' brownie recipe that I make with this cocoa, syrup made from the cocoa and only the best ingredients. Everyone goes ga-ga over them. Syrup - so easy to make - anything that calls for cocoa I use this. Sometimes I mix just a touch into my coffee from a treat. If you have not tried this yet you need to. You WILL NOT be disappointed!!!

Deep chocolate experience
This cocoa takes anything chocolate to an whole new level. The depth and smoothness is beyond any brand I have used, and I have used many. Intense chocolate experience, but not bitter or harsh. Be prepared to be asked for repeat performances!

Best cocoa I've ever used
Believe it or not, I first found out about this cocoa from the Goldie Bear culinary mysteries. I can't remember which one, but I am forever grateful! This is hands down the nest cocoa I've ever used! I don't like it in homemade hot cocoa for some reason, but in every other capacity that I've used it, my recipies have turned out mind blowing!!

The best!
I use ChefShop Cocoa Powder to make what my family calls my "famous" molten lava cakes. I'm told they are of restaurant quality. But I also use it to make my own personal hot cocoas. I often give it a Mexican twist with a dash of cinnamon and cayenne. Rich!

The perfect cocoa powder!
Like others here, I started using this when it was sold by Williams Sonoma. Then I needed to search for a real source when that went away and found Chef Shop. So glad I did! This cocoa powder is dreamy for baking as well as making hot chocolate and other drinks. The fat content lends a terrific texture and lingering flavor; the overall profile is intense but not overwhelmingly bitter. I think it strikes an excellent flavor balance. Highly recommend for any recipe which demands a superior quality chocolate!

Best Cocoa Powder Ever!
I freely admit that I'm hooked. The Chef Shop cocoa powder will do that to you. With just a hint of vanilla, and a dark color and intense flavor, a day is no longer complete without a nightcap of strong cocoa made with this product.

Holy Grail of Cocoas
This is love-of-your-life cocoa, if you are an obsessy baking enthusiast like myself. It is worth its weight in gold. I, too, used to buy it at Williams Sonoma when it was labeled Pernigotti. It is expensive and it is 100% worth it. I can’t bring myself to use up my “old” cocoa, which I thought was the best. (Guittard. Easily second best)

Don't even think of using any other cocoa

Awesome High Quality Cocoa Powder
Got his cocoa powder for my daughter and wife, who are great bakers. My daughter usually bought the Pernigotti Cocoa Powder and was unable to find it anywhere. This was her favorite go to cocoa powder and this one from Chef Shop is equally as good according to her. My wife said the texture, consistency and cocoa flavor is nice to have. Fortunately, I get to enjoy their baked goodies. Both of them give it a “5 star” recommendation!

Our favourite cocoa
I have 8 varieties of cocoa at home -- red cocoa, black cocoa, natural cocoa, and several high-end specialty cocoas (Barry Extra Brut, Valrhona, Guittard, Ghirardelli...). My family goes through enormous quantities of cocoa powder -- for hot cocoa, brownies, chocolate cakes, cookies... and this is by far our favourite. It has depth, complexity, and richness. While the specialty cocoas are excellent, I find they can sometimes be quite bitter, lack richness or body. This one is always perfect for whatever we are making. And being in Canada, I go to great lengths to buy this cocoa -- that should tell you how much we love it!
