Hot Fudge Sauce Recipe

Ingredients

200 g sugar - 1 cup

30g ChefShop cocoa powder - 1/4 cup

1/2 tsp fine sea salt


1 cup heavy cream or a can of Ayam coconut milk/cream

2 tbsp mizuame - or corn syrup

85 g 72% chocolate - 3 ounces


2 tbls unsalted butter

35 ml water - 2 tbls

2 tsp vanilla extract


Double boiler or heavy bottom sauce pan

Hot Fudge Sauce Recipe


1. Add the sugar, cocoa powder and salt into the double boiler and whisk together breaking up the cocoa powder

2. Add the cream and mizuame and chocolate

3. Put your pan over heat and start whisking to combine and melt the chocolate

4. If in a pan watch carefully and you want to bring to a boil/bubbling and then reduce heat to medium

5. Continue to heat for 20 to 30 minutes. If in a saucepan you may get seperation of the chocolate. That is good and it will come back together

6. Remove from heat and tranfer to a heat proof bowl

7. Add butter, water and vanilla extract  and let cool

8.  Once cooled a little, whisk everything together enthusiastiically
