White Label Chocolate by Stephen Beaumier: Santa Cruz, CALIFORNIA

Established in 2016 by Stephan Beaumier and Katy Oursler, White Label Chocolate was founded on the mission of making the cacao-growing and trading world a better and more equitable place for all involved. Their focuses is on making a difference by helping cocoa farmers earn a fair living from their labor. They buy beans directly from small family farms all over the world within the equatorial regions where cacao trees grow, and from community co-ops that process the local cacao crops. Every White Label bar is hand crafted from cacao beans in their chocolate factory in Santa Cruz, California. From hand sorting the beans, to roasting, cracking, winnowing, refining and aging them, to making and tempering the chocolate, it takes about one month for a bag of beans to reach its full potential and become a batch of fine finished chocolate - and each bean and each batch is unique, depending on the variety of cacao bean, where its grown, when its harvested, and how its harvested and processed.
