Two sisters, Olena and Oleksandra, own and manager their small family manufactory in Lutsk, Ukraine. Bean-to-bar (from beans to tiles) is a philosophy of respect for nature, farmers and manual labor that they carry into every aspect of their production of fine wuality craft chocolate.
Like other artisan craft chocolate makers, Olena and Oleksandra manage the entire process and stages of production: from the selection of cocoa beans, their roasting to grinding in melangers and casting into tiles. It is this careful attitude to the process that ensures the quality of our products.
It starts with the quailty of the beans. Using only cocoa beans of the fino de aroma class, which the International Cocoa Association (ICCO) singles out in a category with exceptional taste and aroma. Cocoa, like wine and coffee, is a terroir product. Genetics, climate, fermentation method - all this determines the taste of chocolate.
But quality is only the start. Sourcing ethically grown and harvested cocoa is part of the bean-to-bar philosophy. This means that it is important to know that nature has not been harmed during cultivation and harvesting, and workers have been exploited not child labor used in the growing and harvesting process.
Additionally, they do not use any synthetic ingredients (vanillin, hydrogenated fats), prefer using organic and farm-fresh raw materials, replace animal milk with vegetable raw materials, and choose packaging that can be recycled.
The final result is a beautifuuly made and packaged bar, with unique flavor combinations, and 100% vegan - all made in a war zone with constant interuptions along the way. Now that is dedication!
