This shiro miso has the most complex, delicate flavor of any I've ever had. It's not just salty--there are lots of subtle hints like sweetness and umami counterbalancing the salt, which in any case is less aggressive than other types of miso. It would be hard to go back to the ordinary stuff after tasting this.

We love using this miso in our house for miso chicken and miso soup. It has an excellent balance of complex flavor and umami.
