Best Baked Potato Recipe

I have been practicing making good baked potatoes for a couple of years...and then I watched this (unexpectedly) great video from the new America's Test Kitchen (you can find some of the best cooking stuff here) about how to make perfect baked potatoes! And they are right...they are perfect.

Our version is a little different with the addition of MISO. The key though is temperature. Reach an internal 205 degrees F for perfection!


Pre-heat the oven to 450F. Place a pan with a wire rack in the oven to preheat

1. Poke holes in the potatoes.

2. Brine Potatoes 1 tablespoon Miso or 2 tablespoons salt in 1/2 cup of water

3. Dry the potato - you do not want to steam the skin

4.  Cook the potatoes to an internal temperature of  205F about 45 minutes to 60 minutes

5. Remove from oven and brush rice bran oil over the skin. Or better yet bacon fat. This is to make the skin crispy.

6. Return to oven for 9 minutes

7. Remove from oven and cut open asap to let the steam escape.

Garnish with, caramelized onions, onions cooked in the oven, green onions, chives, scallions, mushrooms, cabbage, salt, bacon, sour cream, cream cheese, baked beans, chili, guacamole,  melted cheese and of course a pound of butter. (Per potato.)
