Apple Almond Crisp Recipe

Ingredients

Fruit

7 to 8 cups of firm, peeled cored apples, cut into 1 inch pieces


3 to 5 tablespoons of lemon juice, Yuzu juice or other citrus juice

1/4 to 1/2 cup sugar

1/4 cup real maple syrup

1 tablespoon grated lemon rind

1 teaspoon ground cinnamon

7. 1/2 teaspoon ground nutmeg

pinches of sea salt 

Topping 

1/2 cup sugar

3/4 cup unbleached all purpose flour

1/2 teaspoon ground cinnamon

1/2 teaspoon sea salt

8 tablespoons cold unsalted butter cut into half inch chunks

1 cup sliced almonds

Apple Almond Crisp Recipe

1. Preheat the oven to 375°F

2. Place your rack in the bottom third of the oven

3. Butter a 2-quart oven-proof, glass or earthenware casserole that is at least 2 inches deep.

4. Mix the apples with the lemon juice, sugar, maple syrup, lemon rind, cinnamon, nutmeg, and salt. Adjust the juice and sugar to taste

5. Please the apples in the casserol

6. To make the topping, stir the sugar, flour, cinnamon, and salt together in a food proccessor

7. Add the butter while pulsing in between each addition. Pulse until the mix is held together, and just crumbly.

8.  Stir in the almonds

9.  Cover the apples evenly with the topping and bake for 50 to 60 minutes until the juices are bubbling and the top has browned.

10. Turn the dish once or twice to even the browning on top

Clol at least 10 minutes before consuming. Consider vanilla ice cream, whipped cream or crème fraîche.
