Nut Chikki - Brittle


Using jaggery in a brittle recipe is like really fun. Almost healthy!

2 cups jaggery

2 cups nuts or seeds - almonds-sesame-peanuts toast them lightly to make it even more fun

1 teaspoon of just ground cardamom

a pinch of saffron threads

1 tablespoon of ghee


#1: Toss your nuts in a pan to toast at medium heat. Not burned just as they start to smell good, set aside to cool down on a plate.

#2: In the same pan add the ghee and turn heat as low it will go.

#3: When the jaggery turns to liquid add the cardamom and saffron threads. Swirl the mixture by moving the pan.

#4: Insert a thermometer (ideally a candy) and cook to 310º F - hard crack stage

#5: Prep a baking sheet with a silicone baking mat or parchment paper.

#6: Remove the pan with the jaggery mixture and quickly fold in the nuts until coated. Spread the mixture with a buttered or oiled spatula. Make it the thickness you like.

#7: Cool completely and break apart and store in a container.
