Chopped Salad w/Salmon Recipe

Ingredients

1 lemon

1/3 cup olive oil

3 romaine hearts

1 1/2 cup of cherry tomatoes sliced in half

3/4 cup thinly sliced cucumber

1/2 cup blue cheese crumbled or feta

1/4 cup of thinly sliced scallions

1 avocado sliced

2 hard boiled eggs sliced or quartered

3.5 to 7 ounces of sockeye or keta salmon

With a wonderful mixture of olive oil, lemon, romaine lettuce, tomatoes, cucumber, cheese and more all topped with a touch of salmon, or any protein like tuna or chicken is simple and easy to make. The protein is a supporting member, not the focus.

With so many elements a chopped salad is a complex texture to munch on. 


 To make the dressing: 

1.  In a small bowl zest the lemon and squeeze the juice in.

2. Whisk the lemon juice and slowly drizzle the olive oil in.

3. Add a pinch of salt and pepper

set aside

to make the salad:

1. Cut or tear the lettuce into bite-sized pieces into a large bowl

2.  Rim the bowl with about half the dressing and toss to fully coat the lettuce

3. Add tomatoes, cucumber, blue cheese, and scallions 

4. Toss to combine 

5. Plate the salad and

6. Place individual slices of avocado and egg on each plate - salt and pepper

7. Place a single piece of salmon on top, or in pieces

8. Drizzle with remaining dressing


 makes about 6 to 8 servings
