Lori Nancy's Yam Casserole Lori has shared this recipe with me before and it is good! It is wicked easy, simple and tasty! Lori is a cook like a lot of us (a lot more organized than I am when it comes to recipes) who loves to cook. And food is not just making a meal, it is about family, tradition, caring and sharing.
directions:
1. Peel yams and cut into chunks, and steam until tender - about 20-30 minutes.
2. Mash cooked yams - about 2 cups.
3. cream butter and sugar together until light and fluffy. 4. Add milk and blend. 5. Stir in egg, flour, cinnamon, nutmeg and salt.
6. Transfer to a 1-1/2 quart casserole dish. 7. Bake in pre-heated (350-degree) oven for 45 minutes (or until skewer inserted in the center comes out clean)
