Known the world over as Ceylon Cinnamon, this has been one of the world's most important spices for millennium. It has a sweet and fragrant aroma, and its warm, lively aromatic flavor is essential to many savory dishes from India and East Asia to Morocco to Mexico.
Much of the cinnamon sold in America is actually cassia; made from a similar bark, cassia is often what we commonly think of as cinnamon. This Ceylon Cinnamon is a botanically different plant known as "true cinnamon" - Cinnamomum zeylanicum, is native to Sri Lanka. Its delicate, floral, complex flavors sets it apart from cassia, but it has its own unique appeal.
