Cilbir - Turkish Eggs - Recipe

Ingredients

1 cup plain Greek yogurt
garlic cloves - finely minced
2 large eggs
3 tablespoons olive oil
2 tablespoons white vinegar
1 tablespoon Aleppo pepper

Medium Sauce Pan

bowl for egg whites
plate covered with parchment paper or waxed paper
two serving bowls

1. Mix the garlic and yogurt and a pinch of salt. Seperate the yogurt into two serving bowls equally, set aside

2. In a medium saucepan full of water bring to a boil

3. While the water is coming to a boil crack one egg into a fine mesh sieve over a bowl. Gently move the egg around so the thinner liquidy egg whites will fall through to the bowl. Transfer the egg to a bowl. Do the same with the second egg and put into a seperate bowl

4. Once the water is boiling use a spoon swirl the water to create a vortex and pour one of the eggs into the middle of the vortex. 

5. Cook for 2 to 3 minutes

6. Use a slotted spoon to remove the egg to the plate with parchment paper

7. Cook the second egg in the same manner as the first

8. Whilst the egg is cooking in a small skillet on medium add the olive oil and the Aleppo pepper and stir to combine

9. When the second egg is done, place one egg each on the seperate bowls of yogurt and equally drizzle the oil pepper over the eggs.

Serve immediatly with bread
