Chinese Broccoli with Oyster Sauce Recipe

Ingredients

450 grams / 1 pound Chinese Broccoli or Bok Choi - also broccoli or broccolini

For the sauce:

1 tsp corn starch (3 grams)
3 tbsp water
1 tbsp oyster sauce
1 tsp soy sauce
1 tbsp Chinese cooking wine 
1/2 tsp sesame oil
1/2 tsp sugar


For the stir-fry:

rice bran oil for the Wok or frying pan
2 clove garlic, finely chopped
2 tsp ginger, grated

Chinese Broccoli with Oyster Sauce Recipe


This simple recipe can be used as is on so many dishes or modify the basics to match your desires! 

1. Bring a pot of salted water to a rolling boil

2. Trim the hard ends off the broccoli, put in the boiling water

3. Parboiling until the broccoli turns bright green and still firm - about 30 seconds - steam should just start to smell

4. Remove from the water immediatly and spread out on a sheet pan or plate to arrest the cooking.

Heat the Wok on high

5. In a bowl combine the corn starch, water, and stir to combine without lumps

6. Add the oyster sauce, soy sauce, cooking wine, sesame oil, and sugar

7. Whisk or stir with a spoon until thoroughly mixed

8. Check the wok with water drops - if the drops make little balls and roll around the wok is ready

9. Add the oil and spread to coat the surface

10. Add the garlic and ginger and toss until fragrant - 30 to 50 seconds

11. Add the broccoli and toss to coat and bring up to temp

12. Transfer to serving platter

13. Add the sauce to the wok and toss to heat

14. Once hot - about 30 to 50 seconds - scoop and top the broccoli 

serve and eat immediatly
