Basic Helicopter Pasta Recipe
Serves 1-2
Ingredients:
1/4 pound Helicopter-shaped Pasta (a good handful plus)
2 tbs Extra Virgin Olive Oil
2 big garlic cloves - diced
1 can Rega Rega San Marzano Tomatoes - pull two tomatoes and save the rest
2 Cooked crispy bacon strips, diced
Parmigiano-Reggiano - some shaved, some grated
Pepper to taste
Directions:
1) Cook pasta al dente in boiling water with lots of sea salt (as salty as the sea).
2) While pasta is cooking, place 1 Tbs olive oil in a warm (small) skillet. Add minced garlic, and warm for a minute or so -- until garlic starts to brown.
3) Select 2 nice tomatoes from the can, and gently slice into large pieces.
4) Pull Pasta and add the skillet, turning to coat.
5) Sprinkle diced bacon and pepper lightly
6) Place tomatoes on pasta in pan.
7) Add shaved parmigano-reggiano to top, and dust with graited parmigiano-reggiano.
8) Drizzle with Olive Oil if needed and serve - ideally, in the skillet.
