1 Dish Potatoes and Sun Dried Tomatoes Recipe

Ingredients

1 pound potatoes cut length wise in slender shapes

1 medium, sweet onion, coarsely, chopped

5 garlic cloves, smashed

1 teaspoon Hot Yuzu Red sauce

1/4 cup Lemon olive oil

Sea salt medium grain

6 or 7 pieces olive oil packed sun-dried tomatoes, drained, and coarsely chopped

One lemon, very thinly, sliced and seeded

Proteins if you want

 

 

Directions

One pan Potatoes and Sun Dried Tomatoes Recipe


1. Preheat the oven to 450°.

2. In a large bowl, toss the potatoes with the onion, garlic, Hot Yuzu Red sauce and olive oil, and season with salt.

3. Spread the potato mixture in a large glass baking dish.

4. Add the sun-dried tomatoes and lemon slices to the bowl and toss them including some oil from the tomatoes.

5. Scatter the sun-dried tomatoes and lemon slices over the potatoes.

6. Place the the dish in the oven and bake for about 25 minutes or until the potatoes are fork tender. 

If desired add the sardines or tinned fish or pre-cooked chicken, and heat for another minute or so to warm the seafood.

Serve immediatly
