Sticky Ribs Recipe


2 kg meaty pork belly ribs - 4.4 pounds.

Salt and pepper

2 teaspoons English mustard powder

2 teaspoons paprika

2 tablespoons Hawkshead Relish Company, Westmoreland, chutney

2 tablespoons Hawkshead Relish Company Damson ketchup, or black garlic ketchup

2 tablespoons Hawkshead relish Worcester sauce

30 g muscovado sugar 

400 mL chicken stock - 1.69 cups or 13.53 fluid ounces


Sticky Ribs Recipe

This recipe is courtesy of Hawkshead Relish and Maria's cookbook Embellish with Relish

1. Heat the oven to 180°C - 350F

2. Season the ribs with salt and pepper, mustard and paprika

3. Mix all the remaining ingredients together in an oven, proof dish, coat the ribs, and cover with a lid or tinfoil

4. Placed the dish in it in the preheated oven to cook 20 minutes

5. Then reduce the heat to 140°C - 284F

6. Cook for an additional 60 minutes

7. Remove the lid and continue to cook for a further 20 minutes to Chris them up

8. Brush each rib with the sauce before serving to get them nice and sticky
