Roasted Garlic Recipe

This recipe it pretty basic. Serve roasted garlic by squeezing it onto toasted artisan bread slices, and drizzling with good olive oil.

2 heads garlic - the bigger the heads the better. 2 teaspoons olive oil
Sea salt

Preheat oven to 400°

Cut tops off garlic heads (enough to expose cloves) and discard. Brush cut side of each garlic head with 1/2 tsp. olive oil, then sprinkle with salt.

Place each garlic head on a sheet of foil; enclose in foil. Bake for 40 minutes. Remove foil packets, untwist tops, and drizzle each garlic head with more olive oil. Return open garlic packets to oven and bake for 20 minutes.

Remove garlic from oven, squeeze cloves onto toasted sliced artisan bread, drizzle with more olive oil, and serve.
