Rice and Beans with Tomato Sauce Recipe

Ingredients

2 cups, uncooked jasmine rice, rinsed

one can kidney beans, rinsed or 2 cups cooked

2 cups puréed tomatoes 

1 tablespoon olive oil

1 onion diced

2 tablespoons chopped garlic

2 teaspoons chopped fresh ginger

3 cups water

half teaspoon sea salt

1/2 teaspoon Bird's Eye Chili Powder or Cayenne Pepper Powder

Directions

Rice and Beans with Tomato Sauce Recipe


1. Rinse the rice in a strainer and put in a 4 quart saucepan

2. Pour the beans into the same strainer and rinse, then add to the pot

3. Add the tomtoes and the olive oil

4. Add 3 cups of water

5. Add the garlic, the ginger and pepper - stir gently to combine

6. Bring to a simmer over medium high heat.

7. Reduce the heat to low and cover the pot and cook 35 to 45 minutes until the rice is tender.

8. Let the rice rest covered for 10 minutes after it's done cooking

9. Then fluff with a fork.
