Pork Chops with Blueberries Recipe


4 spare rib chops

all-purpose flour, for dusting

2 tablespoons butter

3 tablespoons extra virgin olive oil

3/4 cup red wine

2-3/4 cups blueberries

scant 1/2 cup clear honey - like Acacia 



Blueberry Pork Chops Recipe

Adapted from "The Silver Spoon" cookbook (Phaidon Press) -- Italy's best selling cookbook ever.


 1.Preheat oven to 400-degrees F.

2. Dust the chops with flour.

3. Heat the butter and oil in a small flameproof casserole, add the chops and cook, turning occasionally until browned all over.

4. Pour in the wine and cook untiil it has partly evaporated, then season with salt.

5. Pass the blueberries through a food mill and mix with the honey in a bowl.

6. Spread this mixture over the chops, then cover the casserole, transfer to the oven and cook for 1 minutes.

7.Let stand for 10 minutes, then serve.
