Piperade Recipe


3 plum tomatoes peeled and chopped

3 tablespoons olive oil

1 Spanish onion sliced thinly

2 bell peppers chopped

1/2 tsp salt

3 garlic cloves minced

1/2 tsp Piment d'Espelette


Piperade Recipe

1. In a medium sized skillet over medium heat sauté everything except the tomatoes until everything is cooked throough, about 8 mintues.

2. Add the tomatoes to the vegetables and simmer for about 15 minutes, until the tomatoes have softened and the liquid has turned to a sauce.

Serve with other dishes or have as the main course.
