Pear, Arugula and Bacon Jam Panini Recipe

We have been digging into our weekly Full Circle Farm box, and coming up with lots of yummy lunch recipes. It's like a fun food game - trying out new flavor combinations and using up whatever we have left in the weekly shipment. This recipe was a particularly good one...

1 pear - washed and sliced into 1/8-inch slices
1 bunch of arugula - coarsely chopped
2 tablespoons olive oil
1 teaspoon espelette pepper
1 clove hard-neck garlic - minced
fine Fleur de Sel to taste

Rustic Italian Brand - sliced
Skillet Bacon Jam - a bunch

1. Slice pear, and put aside. Pre-heat panini grill to on medium heat.

2. in olive oil over medium heat the arugula, espelette and garlic, until tender - about 5 minutes. Add Fleur de Sel to taste. Be sure not to burn garlic.

3. Spread a layer of Bacon Jam on each side of two slices of bread. Place sauteed arugula mixture on one slice, top with sliced of pear. Close sandwich, and place on panini grill pre-heated to medium.

4. Grill until golden brown - about 5 minutes. Service immediately while still warm.
