Bacon Jam Recipe


1 pound bacon, cut into pieces

1 sweet onion, diced

4 shallots, minced

3 cloves of garlic, minced

2 shakes of Shichmi Togarashi Red Pepper mix 

1/2 cup muscovado sugar

2 tablespoons Black ginger syrup

1/3 cup Espelt de Garnatxa Wine Vinegar or apple cider vinegar

tellicherry pepper and sea salt to taste


Bacon Jam Recipe

Easy, Easy, Easy! Gather the ingredients, cook’em and you are done. Top just about everything! Make sandwiches sing and baked potatoes what you think they should be! Or best yet add it to the Beans and Corn recipe.

1. Cook the bacon until just crisp but not burnt and remove from pan.

2. Remove most of the bacon fat leaving enough to cook in about a tablespoon

3. On medium low add the onions and shallots to carmelize

4. Add the garlic, red pepper mix, muscovado sugar, black ginger syrup and stir in

5. Add the vinegar and bacon and stir in

6. Bring the mixture to a simmer and then reduce the heat to low and cover

7. Cook to reduce the liquid and thicken to a jam consistency covered, about 60 minutes, add water in small amounts if necessary

8. Salt and pepper to taste

Use right away or cool and put in a container with a lid
