Orange and Grapefruit Citrus Salad Recipe

1. To pith the orange and grapefruit, first cut the outside peel away from the fruit such that no membrane remains. Place a sieve over a medium bowl. Hold the orange over the bowl, and using a paring knife, cut along the membrane on both sides of each segment, and pop-out the segments and let them fall into the sieve. Repeat with the grapefruit.
2. Squeeze what if left of the orange and grapefruit, collecting as much juice as possible. Reserve for later. Place the fruit segments and fennel in a large salad bowl.
In a food processor, blend together the Lemon oil, basil and 3 tablespoons of the reserved juice until smooth. Season with salt and freshly ground pepper to taste. Pour dressing over fruit and fennel. Add the chopped walnuts and toss until all the ingredients are well coated.
