Master Millet Recipe
‘Basic’ Millet can be cooked in a couple of different ways, depending on the desired outcome and purpose.
Dry and Fluffy Millet
ingredients:
1 cup millet
2 cups water
salt
directions:
1. Toast 1 cup of millet over medium heat in a dry sauté pan until it smells toasty and changes color slightly. When millet is done toasting, immediately rinse in a fine mesh sieve.
2. Bring 2 cups of water to a boil with a couple of pinches of salt. Add rinsed millet and bring back to a boil. Turn the heat to low, cover to pot, and simmer for 25-30 minutes. Take off the heat and set aside, covered, for 5 minutes. Fluff with fork and enjoy as desired
Moist Miller
ingredients
1 cup millet
3 cups water
salt
directions:
1. Toast and rinse 1 cup of millet as above for Dry and fluffy millet.
2. Bring 3 cups of water to a boil with a couple pinches of salt. Add millet and bring back to a boil. Turn down to a simmer, cover pan, and cook for 25-30 minutes. Take off the heat and set aside, covered, for 5 minutes. Enjoy as desired.
