Mizuame is a thick syrup-like sweetener made from barley and other starches (like corn starch) which is then converted into sugar. Mizuame is added to wagashi to give them a sheen, eaten in ways similar to honey and can be a main ingredient in many Japanese sweets. Mizuame water candy is produced in a very similar fashion to corn syrup and is very similar in taste.
