Hot Chocolate Pie Recipe

Ingredients

For the Crust:

Butter for the pie dish

120 grams Effie's walnut with cranberry and fennel biscuits

6 tablespoons melted butter

1/3 cup caster sugar

Fine Sea salt

For the pie:

3 cups whole milk

Four egg yolks

3/4 cup caster sugar

1/3 cup cornstarch

1 1/2 teaspoons cinnamon

1/3 teaspoon cayenne pepper

1 teaspoon salt

2 tablespoons butter

1 teaspoon vanilla extract 2X

2 cups dark chocolate discs - 62% to 75%

For the topping:

1 cup marshmallow cream - marshmallow fluff

Whipped cream

Directions

Hot Chocolate Pie Recipe

For the Crust:

1. Preheat the oven to 350°F and spread some butter in the pie dish

2. In a food processor pulse the Effies Homemade crackers into crumbs

3. Transfer the crumbs to a medium size bowl and add the melted butter, sugar, a pinch of salt and whisk to combine

4. Press the mixture firmly into the prepared pie dish.

5. Bake until crust is lightly golden about 8 to 10 minutes - watch carefully so as not to burn it

6. Cool to room temperature.

The Crust

7. Whisk together, milk, egg yolks, until fully combined.

8. In a small saucepan over low heat, combine the sugar, the cornstarch, cinnamon, cayenne, and salt - whisk to combine

9. Add the milk mixture and continuing whisk until no lumps are present

10. Bring the mixture to a boil and then reduce immediately and let simmer for one minute

11. Remove from the heat and stir in the butter, vanilla, and dark chocolate discs

12. Continue stirring until the chocolate is fully melted

13. Pour the mixture into the pie crust and refrigerate until firm - at least 2 1/2 hours

The Topping

14. To make the marshmallow topping for the marshmallow cream into the whipped topping and then spread onto the pie
