Holiday Cranberry Bread Recipe - Ann (2020)


1 orange 

3/4 cups liquid (juice of said orange, plus enough boiling water to make 3/4 cups liquid)

2 tablespoons butter

1 egg

1 cup sugar

1 cup cranberries - chopped

1 cup walnuts - chopped

1/2 tsp salt

1/2 tsp baking soda

Ann Cranberry Bread!

I asked, and lots of thinking could be heard, then Ann said she would love to share, but after orders were shipped out. Ann, you see, has been overwhelmed by orders for her scarves and fingerless gloves. For the last 29 years she has been inspired to make a change in peoples lives and started OpportunityKnits in 2017 as a way to contribute and make a difference.

"The mission of OpportunityKnits is to support women in transition from prison back to community, family and employment. 10% of all sales is used to purchase personal care items, which I donate via my friends and former colleagues at Roadmap to Success, a local re-entry program."

And then the next day she said "I know, I’ll make cranberry bread. Do you need it typed out or can I send a pic of the recipe?"

And then she made the bread that night and sent a pic in the morning. (I wonder why I didn't get any bread???)

Cranberry Bread


1. Zest 1 orange and set aside.

2. Squeeze juice from orange, and add enough boiling water to make 3/4 cup.  Stir in butter to melt.

3. In a separate bowl, combine egg and sugar - and mix well.  Then add orange mixture. Add cranberries and chopped walnuts.

4. In separate bowl, sift together flour, salt and baking soda. Add dry ingredients to orange juice mixture.

5. Spoon dough into buttered 9x5 loaf pan, and bake at 325 degrees for an hour.

6. Let cool and remove from loaf pan

What is the topping?
The photo shows a topping on the bread, but the recipe doesn't mention any topping. It looks like chopped walnuts, perhaps? It would be better with the topping.
