Fish and Chips Recipe

Ingredients

About 6 cups rice bran oil

60 grams all-purpose flour plus more

60 grams cornstarch

1 teaspoon baking powder

Sea salt, to taste

1 pinch freshly ground black pepper, to taste

3/4 cup stout beer, cold

4 (7-ounce) cod fillets ( a thick, white fish)

Fish and Chips is relatively easy to make on your own. And it can be very good made at home.

This recipe is similar to many out there; changing the recipe with different choices of flour and spices will make it yours.

The flour batter:
1. Mix flour, cornstarch, baking powder, salt and pepper in a wide low bowl or baking dish.

2. Using a fork, whisk the flour, while adding the beer until fully mixed. Should be a smooth batter. Place the batter in the fridge to chill for an hour.

The Fish:

Place the fillets on a paper towel and pat them dry. Season them lightly with salt.

2. Put some flour in a separate dish and coat each fillet in the flour and shake off excess.

3. Place the fillet into the batter coating the entire piece.

4. Heat oil to 375 F in a deep cast iron pan or a Dutch oven 

5. Carefully place the fillets in the oil with a spider or a slotted spoon.

6. Fry for around 6 to 8 minutes.

7. Look for the batter to be crisp and golden brown. Flip the fish every once in awhile to ensure even cooking.

8. When they are ready remove from the oil and place the fillets on sheet pans lined with brown paper bags. Salt lightly.
