Banana & Dates Bread Recipe

Ingredients

180 grams of Medjool Dates with pit - about 1 overflowing cup 

4 large ripe bananas

2 large eggs

1 1/2 tsp vanilla 2x extract

100 grams GF Italian Flour

30 grams Almond Flour

25 grams rice flour

1 cup almond meal

1 tsp cinnamon

1 tsp baking powder

1/2 tsp baking soda

sea salt

1/3 cup plain Greek yogurt

100 grams red walnuts - 1 cup

1. Pit the dates and finally chop them.

2. Place in a small saucepan with half a cup of water over medium low heat

3. Stir until the water has evaporated - less than five minutes

4. Remove from the heat and let to cool to room temperature

4. Preheat the oven to 350° F

5. Butter a loaf pan

6. In a bowl, mash the bananas and vanilla extract with a fork or potato masher - set aside

7. In a large mixing bowl whisk the flower baking powder, baking soda, and salt to get air into the mixture

8. Add the banana mix and stir in to fully combine

9. Add the almond meal and date purée to the mixture gently folding in to fully incorporate

10. Add the yogurt and fold in to combine

11. Add 3/4 of the walnuts to the mix

12. Put the dough into the bread tin and spread to even out

13. Place the remaining walnuts on top

14. Bake in the oven for 60 to 75 minutes. Remove and cool on a rack when the bread reaches 205° to 210° f in the middle of the bread

15. Wait to cool to the touch and then remove from the pan and let cool on a rack to allow STEAM to escape.
