Anchoiade Recipe
This Provençal classic made with pureed of anchovies, garlic and olive oil. Just spread a little on toasted crouton, or serve as a dip with your favorite raw vegetables.
ingredients:
10 whole salt-packed anchovies - soaked and filleted
4 hard-neck garlic cloves - chopped
1/2 cup extra-virgin olive oil
1/2 teaspoon Herbs d'Provence
1-1/2 teaspoons red wine vinegar
Freshly ground pepper
Grilled or toasted bread, for serving
directions:
1. In a food processor or blender, puree the anchovies with the garlic. With the machine on, pour in the olive oil into mixture until blended, and add herbs, red wine vinegar and pepper.
2. Anchoiade can be chilled for 1-2 hours. Remember to mix well before serving.
3. Transfer the Anchoïade to a serving bowl and serve with vegetables or grilled/toasted bread.
