Vodka Pie Crust Recipe

Ingredients

350 grams seperated in to 180 grams and 170 grams flour  (1 1/2 cups + 1 cup) 

1 teaspoon sea salt 

2 tablespoons sugar 

170 grams (1 1/2 sticks) cold unsalted butter, cut into 1/4 inch slices 

1/2 cup chilled lard or vegetable shortening cut into 4 pieces 

1/4 cup vodka, chilled 

1/4 cup chilled water 

equipment: 

A food processor if you have one, or a bowl works too.

A pie pan or dish

Homemade Vodka Pie Crust from Scratch

This recipe is based on Cooks Illustrated "almost famous" pie crust recipe. Check out Cooks Illustrated, they do good things.

instructions:

#1: Combine 1 1/2 cups of the flour, salt, and sugar in a food processor until mixed. About 2 one second pulses.

#2: Add butter and lard and pulse mix until dough just comes together and looks like cottage cheese. All the flour should be incorporated. About 15 seconds.

#3: Scrape bowl and evenly distribute the dough. Add remaining 1 cup of flour. Pulse until the dough is evenly distributed in the bowl. About 4 to 6 quick pulses.

#4: Empty into a medium bowl.

#5: Sprinkle vodka and water over mixture.

#6: With a spatula, fold the dough onto itself, pressing down on dough until dough is slightly tacky and sticks together.

#7: Divide the dough into 2 even balls. Flatten the balls into a 4 inch disk. Wrap in plastic wrap and refrigerate for 60 minutes. Or up to 2 days.
