2 chicken breasts, bone in and skin on
sea salt
freshly ground Tellicherry Pepper
Fennel Pollen
olive oil
directions:
1. Select a small metal baking pan - such that the breasts fit tightly inside.
2. Pre-heat oven to 350f degrees.
3. Rub breasts with olive oil, salt liberally and ground pepper. Sprinkle with fennel pollen, or any other spices you fancy.
4. Place breasts in pan bone side up, place in oven, and bake for 15 minutes bone side up. 5. Turn breast over and bake an additional 20 to 30 minutes, skin side up until brown, and chicken is done - and juices run clear or internal temperature is approximately 165f degrees.
