From the back of the bar: Desmond, part farmer, part phylosopher, part madman, owns Bachelor Hall Estates in St Thomas Parish, Jamaica. It was left to him by his grandafther. Located in a unique location, the estate is fed by two fresh water springs in very a nutrient-rich valley between the spiritual and majestic Blue and John Crow mountains. The cacao seedlings were originally translanted from Trinidad in the 1800's, today the cacao trees grow naturally and without the use of fertilizer, and surrounded by coconut palms.
