1 medium head hardneck garlic1 tablespoon olive oil 2 pounds potatoes - peeled and quartered 4 tablespoons unsalted butter1/2 cup whole milk (or 1/4 cut half-and-half & 1/4 cup milk)sea salt and freshly ground pepper to taste
Directions:Pre-heat oven to 350F
1. Peel excess paper off full head of hard-neck garlic. Drizzle garlic with olive oil and wrap in aluminum foil and place in baking pan. Place in 350-degree pre-heated oven, and bake for 1 hour.
2. Bring a large pot of salted water to a boil. 3. Add potatoes, and cook until tender, about 15-20 minutes. 4. Drain, cool and mash. 5. Stir in butter, milk/half-and-half, salt and pepper. 6. Remove the garlic from the oven, and cut head in half. 7. Squeeze the softened cloves into the potatoes and stir/mash until desired consistency is achieved.
