Moroccan Tomato Salad with Feta and Argan Oil Recipe
This is as simple as can be, but always a crowd pleaser.

4 medium tomatoes - cut into 1-inch cubes
1 tablespoon argan oil
1/4 pound feta cheese - cut into 1/2 inch cubes
4 cups arugula or bably spinach leaves
Sea salt and freshly ground pepper to taste

1. Place feta cubs in a bowl, and sprinkle with argan oil. Stir gently and allow to "baste" for 10-15 minutes.

2. Combine argan-seasoned cheese with arugula leaves and tomatoes. Grind a little black pepper over the salad, and serve.

The Moroccan tomato salad with feta and argan oil is suitable for 2 to 4 servings.
