Ginger Cake Recipe
Preheat the oven to 350°F.
Butter the cake pans.
1. Put the ginger into a food processor and process until it is in small bits, or chop fine by hand.
2. Put the ginger and 1/4 cup of sugar in a small skillet or saucepan and cook over medium heat, stirring constantly until the sugar has melted, and the mixture is warm - this takes only a minute or two
3. Set aside.
4. Put the Lemon pieces in the processor and process until finely chopped — or chop fine by hand.
5. And the lemons to the cooled ginger mixture.
6. Put the butter into a mixing bowl and beat a second or two; slowly add the remaining sugar and beat until smooth.
7. Add the eggs and beat well.
8. Stir in the buttermilk.
9. Add the flour, salt, and baking soda, and beat until smooth.
10. Add the ginger-lemon mixture and mix well.
11. Spoon the batter into the butterd cake pans.
12. Bake for 25 minutes
Remove from oven and cool the pans for five minutes, then turn out onto racks until completely cooled.
Cover with whipped cream and finely chopped candied citrus and crystallized ginger and fresh mango completes this cake.
