Some of our Craft Chocolate Makers are in town for the Northwest Chocolate Show, and have agreed to stop by the shop (ChefShop.com, 1425 Elliott Ave W, Seattle, 98119) with samples - so that you can come say "Hi!" - and try some of her delicious chocolate creations! 

MISSION CHOCOLATE - Brazil: Arcelia Gallardo is the founder of Mission Chocolate, and is a truly international craft chocolate maker, embracing the spirit of the local Brazilian farm-to-bar chocolate production. Arcelia makes her world-class chocolate bars almost exclusively with locally grown and processed ingredients, including Brazilian-grown cacao beans and Brazilian-grown nuts and fruits.

KARUNA CHOCOLATE - Italy: 
Armin Untersteiner and Katya Waldboth both live in South Tyrol, a German-speaking region in Northern Italy.  When they founded Karuna Chocolate in 2018, they were the first in the region to produce organic bean-to-bar chocolate. In 2014, Katya had the opportunity to work in Southern India. While living there they were introduced to cacao farming. When they returned home, they discovered that no one was producing organic bean-to-bar chocolate. They decided to turn their newfound passion into a family project, and Karuna Chocolate was born. 

MIKE & BECKY - Netherlands: At MIKE&BECKY Chocolate, Julia ‘Mike’ Mikerova & Björn ‘Becky’ Becker focus only on the cacao and doing everything right: from the bean origins, to bringing out the best of the terroir, to supporting their farmers. Even bean comes free of child labor, is grown and processed eco-reponsibly, is organic and workers properly supported along the way. Not to mention, everything is delicious! Based in Brussels, they keep things simple: organic cacao beans, organic beet sugar, and a touch of organic cacao butter. That’s all there is in their chocolate. All made in their 100% green energy workshop, they execute every pains-taking step of their chocolate making themselves – from cleaning and roasting, to grinding, conching, tempering, and wrapping. 

KESSHO CHOCOLATE - Austin, TX: Co-founders, Liang Wang and Mark Huetsch, embarked on this sweet adventure of weave together their favorite Asian flavors with bean-to-bar chocolate in 2018. What started as a pastry shop in Beijing in 2009, expanded into a bean-to-bar operation in 2019, and eventually relocated to Austin, TX post-pandemic. Every flavor combination they create tells a unique story that reflects the rich diversity of the hand-selected Asian ingredients that reflect their year of living and working in China, and celebrates the myriad of South American and African cultures and identities linked to the delightful indulgence called cacao.
