Corn Muffins

Corn Muffins are pretty basic - pretty special - and really comforting.
Makes 36 1 1/4 inch muffins
ingredients:
1 1/2 cups cornmeal / polenta
1 cup sifted flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup sugar
1 1/2 cups whole milk
1/4 pound (1 stick) unsalted butter melted
2 eggs lightly beaten
instructions:
#1: Preheat the oven to 400º F
#2: Butter the muffin tins
#3: Combine the cornmeal, flour, baking powder, teaspoon salt, sugar, in a large bowl.
#4: Mix the butter, milk and eggs together in the bowl.
#5: Stir the milk mixture into the flour mix until just moistened.
#6: Spoon the prepared batter into the muffin tins.
#7: Bake about 14 to 16 minutes until the golden brown. Cool the tins for 5 minutes on a wire rack off the stove. Then remove the muffins and fully cool.
