Castagnaccio - Chestnut Cake Recipe

Ingredients

oilve oil for drizzling and brushing 

3 1/2 cups chestnut flour

1 cup milk 

1 1/2 cups cold water 

1/4 cupe caster sugar

3 tablespoons olive oil 

3 tablespoons pine nuts

rosemary needles from 1 sprig

Directions

Castagnaccio - Chestnut Cake Recipe


1. Preheat up the oven to 350°F

2. Brush with olive oil a pie pan or similar that is 3/4 inches deep 

3. Sift the flour into a bowl and then gradually whisk in the milk and 1 1/2 cups cold water until thoroughly combined but not runny

4. Stir in the sugar, a pinch of salt and the 3 tablespoons of oil

5. Spoon the mixture into the prepared pan

6. Sprinkle with the pinenuts and the rosemary and drizzle with a little olive oil.

7. Bake for about 40 minutes 

Let cool before serving
