Basic Polenta Recipe

It takes time and attention to make it right. It is a recipe that reminds you that food is more than just eating, it is a process that makes you whole, inside and out.

Time does not equal difficulty or skill. Make your Polenta right and you will be a hero, a superstar. All it takes is time, a little concentration. I find if you solve the worlds problems whilst you stir the results are better. It can take 45 to 60 minutes to make. And it should, as longer is better.

This is basic. From here experimentation will help you get to the perfect consistency you need for the dish you are making.


serves 4 to 6

ingredients:
3 and 1/2 cups corn flour

7 and 1/2 cups of water

additional pan of water

sea salt for the water

equipment:
two pan for boiling water

a wooden stir stick or spoon or whisk

instructions:

#1: Bring salted water to a boil. Keep the second pan with boiling water if needed.

#2: Sprinkle the corn flour lightly into the water. Keep the water moving and the corn flour suspended by stirring constantly.

#3: As soon as the polenta thickens add a drop of water from the second pan of hot water. This little addition of moisture in tiny quantities will get the consistency from thick to thin. All dependent on your recipe you are making.
