Basic Guacamole Recipe
A good friend of ours from Mexico used to make a simple authentic guacamole for us all the time. It was so perfect and so refreshing - every time. We haven't seen her as much since she got married. We miss her, and and we really miss her guacamole. But our recipe, using Reed Avocados, is the next best thing. Simple and quick. Best way to use up very ripe avocados.
Ingredients: 1 ripe
Reed Avocados, pitted, peeled and mashed with a fork
¼ cup finely minced onion
1 clove
organic hard-neck garlic - minced
1 tablespoon fresh lime juice, or to taste
1/2 teaspoons your favorite
sea salt, or to taste
1 small tomato, diced
Directions:
Mash avocado meat in the skin - and then transfer mashed avocado to a bowl. Add everything but the tomatoes, and stir to combine. Add tomatoes and lightly chill again.
Serve with really good chips
Makes 2-3 cups - depending on the size of the avocado
