Winter Greens and Farro Side Dish Recipe

This perfect fall dish is a prime example of what good produce and a few choice ingredients can get you.

1 cup farro (Emmer)
3 cups water
1 lb. organic kale, mustard greens or chard
3 Tbsp. apple cider vinegar

2/3 cup olive oil

1 Tbsp. honey, or to taste
1 cup chopped dried tart cherries (or other fruit)

1. Bring lightly salted water to boil. Add farro and turn heat down to simmer; cover and cook for 45 minutes to an hour, until grains are "al dente".

2. Rinse greens well and chop them into small pieces. Combine with cooked farro while still warm. Add chopped cranberries or other fruit.

3.Combine vinegar, olive oil and honey, and pour over ingredients. Toss well to coat. Serve immediately or let it rest at room temperature to cool.
