150 grams glutinous rice flour - 1 1/3 cup
100 ml of water - 1/2 cup
45 grams caster sugar
40 ml coconut milk - 1/4 cup
rice bran oil for pan and hands
Like a pancake made with rice flour, sort of1. Put the flour in a mixing bowl2. In a small pot put the water, coconut milk, sugar and oil and heat to a simmer3. As soon as it simmers pour over the flour and mix with a spoon or spatula immediately4. Fully combine to form a ball5. Once in a ball using your hands covered in a little oil and knead the dough until smooth. 3 to 8 minutes6. If the dough feels dry add a finger dipped in water to keep it glossy7. Divide into 8 portions and roll them in your hands into balls and then flatten and set aside8. Heat a skillet over medium-low heat - cast iron or non-stick may work best 9. Add rice bran oil to the pan to cover11. Add the dough disks to the pan a few at a time12. Cook both sides until golden brown - a few minutes per side - do not turn up the heat to cook faster as they will burnRemove and serve - best eaten warm - if they do get cold you can reheat
