Killer Garlic Chicken Recipe


3 heads of garlic - cloves peeled and and smashed or diced

50 grams fresh ginger - grated 

Shio Koji - 10% of weight of the protein - IE: 100 grams of protein = 10 grams of liquid

1 cup chicken stock

8 chicken thighs - or 4 breasts

salt and pepper to finish


Killer Garlic Chicken Recipe 

this is a work in progress - test it at your own risk, though it should repel vampires


1. Peel and crush the garlic cloves

2. Grate ginger

3. In a saucepan warm the chicken stock

4. Add the garlic and ginger and simmer untill the steam smells effervescent

5. Remove from the heat and let cool

6. Add Shio Koji and stir in

7. Place chicken and the marinade in a bowl or dish.

8. Broil the chicken to 165F - about 30 to 45 minutes - you can turn over once or twice.

Salt and pepper to taste. Goes well with rice, wild rice, cooked tomato.
