The dark flesh is due to the presence of anthrocyanins, a family of polyphenols more common to other fruits - like berries. The orange itself has a distinct raspberry-like flavor, in addition to the typical citrus notes. Blood orange is a natural mutation of the traditional orange - which itself was probably a hybrid between a pomolo and a tangerine.
