8 Bone in and Skin on chicken thighs

2 tablespoons Olive Oil

sea salt - fine

2 tablespoons Kefta Rub

2 tablespoons Harissa


Harissa & Kefta Chicken Thighs in the oven Recipe

This recipe came from the need to make a chicken recipe full of flavor that was easy and fast to construct.

Place baking sheet large enough to hold all the chicken, with space between, in the oven, and pre-heat to 350F, 

1. Place the chicken thighs in a large bowl. I prefer metal as it is easier to clean.

2. Drizzle the olive oil over the chicken covering all surfaces. Toss the chicken in the pan to ensure coverage.

3. Shake salt over the chicken and turn

4. Sprinkle the Kefta rub and turn the chicken to mix and cover, doing half at a time.

5. Add the Harissa and turn the chicken

6. When oven is to temperature, pull the bakng sheet out and pour the chicken onto the sheet. With skin side down make space between the thighs to allow good air flow and return to oven

7. At 10 minutes flip the chicken. This is a good time to take the temperature of one piece just to see where you are at.

8. In ten minutes check the temp. Normal cooking time range is about 35 minutes. Done temp is 165. Because of the makeup of thighs 185 can be better. So between 165 and 185 is good.

9. Pull the chicken from the pan. Let the chicken rest 5 minutes.

Whilst you wait you could oven blast broccoli, just crank the oven all the way up and drop the olive oil marinated broccoli onto the same sheet pan.
