Grilled Pheasant Recipe
This wonderful bird, like most game is low in fat and can dry out quickly. To preserve the unique flavor it is best to add some fat to the cooking process. Called "larding", is as easy as wrapping with Pancetta or bacon around the bird. In this case, draping the bird on the grill with bacon is a bit less fussy and helps achieve good results.
Grill like you would a chicken, it takes less time as the pheasant is smaller, the wonderful flavor is a nice change.
