Fava Bean Creamy Soup Recipe
1. Rinse and soak the fava beans overnight or at least 12 hours
2. Dice the onion and crush the garlic
3. In a medium pot heat 2 to 3 tablespoons olive oil over medium heat
4. Add the onions cook until translucent.
5. Add the garlic and stir in.
6. Drain the fava beans and rinse thoroughly.
7. Add the beans to the pot, stirring to cover in the oil, onions, and garlic.
8. Add enough stock to cover by 1 inch.
9. Let simmer 40 to 60 minutes checking to see if you need to add more stock to keep the beans covered.
10. When the beans are soft enough, slowly stir in the semola flour one tablespoon at a time until thickened.
11. Salt and pepper
Finish with a nice olive oil and dip your spoon and bread!
Also using a stick blender or blender will break up the skin of the fava bean to make a creamy soup.
As an option add any of these with the beans - tomato puree, carrots, leeks, cumin, paprika, cilantro
The Fava beans will always have a shell of an exterior and the center will be very creamy texture.
