Classic Umbrian Family Pasta Recipe


approximately 1 pound of pasta

1/2 pound broccoli flowers

1/2 cup walnuts - chopped

1/4 pound gorgonzola cheese

1 tablespoon butter


Classic Umbrian Family Pasta Recipe

This recipe is from our friend Giuseppe. Although we made this recipe with 50% whole grain farro pasta, any shaped pasta will do.


1. Boil broccoli in boiling water until al dente, then strain and set aside.

2. Cook pasta in boiling salt water until al dente. About 10-12 minutes.

3. While pasta is cooking, melt cheese and butter in saucepan. Add cooked broccoli and mix well. Add cooked pasta to sauce, mix well and transfer to a serving bowl. Sprinkle with walnuts and serve.
