Classic Applesauce Recipe
4 pounds of apples
A cinnamon stick or a chunk of bark
2 tablespoons fresh lemon juice from a lemon (not a jar!)
1 vanilla bean, split lengthwise, or 1 teaspoon vanilla paste
salt of the sea
equipment:
heavy pot or dutch oven, a food mill
Classic Applesauce Recipe
Easy to make - 4 ingredients and you're done
Take those apples and make some good stuff.
instructions:
#1: Put everything in the pot except the vanilla bean.
#2: Scrape the seeds of the pod into the pot and add the pod as well.
#3: Turn to medium heat and then turn down to low. Cover the pot.
#4: Stir the apples with a wood spoon to keep them from scorching. Add a touch of water if they are getting to hot or dry. Cook the apples until soft and falling apart. 40 to 50 minutes.
#5: Uncover and cool. Ideally pass it thru a food mill. Or use a stick blender. If the apples are too watery return pot to the stove and heat until it thickens a little.
#6: Store in the refrigerator if you don't eat it all when it is warm.
